Soft : Jasmine tea, hot or cold, lightly brewed and/ or sweetened. Alcoholic : Alsacien wine, Reisling or Gerwurtztraminer.
For 4 : Prepared 2 hours before. Melt 25 g of butter in a pot, add a cucumber and two chopped shallots. Cover and leave to cook on a low fire during 5 minutes, stirring from time to time. Add 30 cl of milk, a bay leaf, salt and pepper. Let it simmer for 10 minutes. Take out the bay leaf, put it all in a mixer, then serve it in a dish. Add a tablespoon of chopped chives, and one of fresh mint too. Leave it in the fridge for two hours. When it's time to eat, serve each plate decorated with mintleaf.
A beautiful breast of chicken per person (preferably outdoor raised), one chicken flavoured stock cube, 25g of butter and a packet of sesame grains. Poach the chicken in the stock for 12 minutes, cut them into large, rough slices, then dip them in the melted butter. Coat the chicken pieces in the sesame, like breadcrumbs.
Serve hot or cold. Propose that little extra something with a oriental barbecue sauce (type Hoi Sin), and a little sticky rice.
Put your oven on grill position. Choose 2 lovely grapefruits. It's not the size that counts, but the skin's colour and scent. Avoid the acid types. Take the fruit out of the fridge 20 minutes before, cut them in half, and peel the pulp from the rind without damaging either one. Sprinkle with a generous amount of sugar and cook them in the oven until they have attained that caramel state. Add a segment of tangerine, and serve immediately.
