In order to find good feta, it's best to avoid those so called speciality counters. A good greek or oriental grocery store is a better bet. Cut the feta into cubes, then roll them in: curry, paprika, powdered cumin, parsley or chopped coriander, pepper and crushed berries. Present them either on cocktail sticks or on a tray.
Marinate it for at least 30 minutes. Count at least 150-200g of pork loin, roughly cut into large pieces. Mix half a tablespoon of powdered coriander, a few drops of Nioc Man, 3 tablespoons of soya sauce, 2 tablespoon of ginger powder or the same volume of fresh grated ginger, parsley leaves finely cut and 10 coriander leaves in a large dish then add the meat, making sure that it is completely covered by the marinade. When it has marinated, take it out of the fridge, and cook it quickly in a wok with a few onoins and finely sliced peppers. Keep the meat slightly done and serve it with thailandese rice.
To be kept cool at the beginning of the meal. To make the pastry, mix 250g of flour, 125g of butter, 75g of sugar and an egg. Mix it all together, and let it rest for an hour on a floured board. Or if you don't have the time, you can also buy ready made pastry in most shops. Precook it 15 minutes at 180° (th. 6). During this time, grate the rind of 3 well washed lemons. Squeeze and filter the lemon juice into a bowl. Mix 100g of butter, 125g of brown sugar, 3 eggs, 2 tablespoons of fresh cream and add a little lemoncello (lemon liquor), then add the rind and the lemon juice. Spread the mixture onto the pastry.
